Business Food Waste Prevention
40% of food produced in the United States goes to waste each year. For customer-facing businesses, the amount of food wasted is equal to 18 million of tons of food waste, valued at $169.2 billion annually. Businesses can reduce their costs and their impact on the environment by preventing surplus food waste. The following are techniques your business can implement today to prevent food waste.
Prevent Food Waste
Food service workers spend their day surrounded by food but aren’t always able to afford to purchase food for themselves or their families. A 2022 study done by the Economic Roundtable and United Food and Commercial Workers Union found that 78% of grocery workers they represent experience food insecurity. (That number jumps to a staggering 85% among single parents.)
Food-generating businesses may provide their surplus edible food directly to their staff to reduce food waste. A robust surplus-to-staff program prevents waste, encourages employee retention, and will help you comply with SB 1383’s edible food recovery requirements by reducing or eliminating the need for regular surplus food pick ups by food recovery organizations.
Businesses can sign up to sell product on discounted food marketplaces like Too Good To Go and FlashFood. These marketplaces provide an outlet to sell surplus, while also providing an additional avenue for selling food before it needs to be donated.
What is measured can be managed. Kitchens managing prepared foods can participate in services like Winnow or Leanpath that use AI to measure their waste streams and suggest purchasing and production adjustments.
The County’s Environmental Health Services Department offers a program to help businesses and organizations comply with the SB 1383 edible food recovery requirements, including support with setting up food recovery contracts and educating staff on safe food donation handling, with free hands-on technical assistance.
